Arzak
Though his eponymous flagship Michelin 3-star restaurant in San Sebastian is now presided by his daughter Elena, Juan Mari Arzak is the undisputed patriarch of Spanish gastronomy, since almost single-handedly bringing about the fusion of nouvelle cuisine and traditional Basque cooking.
