(I know your name because you sent me a message which I churlishly failed to answer - sorry.)
Your best source for information is the British Consulate's page on Marriage in Spain [15], which says "in practice it will usually be necessary for one of the couple to have been legally resident in Spain for at least two years." I think this is probably a bit pessimistic, but they could be right (if you are marrying a Spaniard, it is a different ballgame, of course). They go on to say that "application for marriage in Spain will usually involve lengthy and time-consuming paperwork," which I know for a fact to be true, and recommend allowing sufficient time for the bureaucracy (something like four or five months, minimum, I would guess).
There are ways of getting round all this (but I stress that I don't know anyone who has done so), including finding a friendly (and possibly bribe-receptive) mayor, that kind of thing. The Consulate's website suggests having the actual ceremony in Gibraltar, which is quite handy for a reception somewhere in the Costa del Sol, but not for Majorca. So, I'm sorry if this is not what you were hoping to hear, but I'm afraid it is the reality.
