Very much depends what you want and where you want to be. Northern Spain is quite different from the south, and Benidorm for example has a peculiar microclimate all to itself but, in general, if you want the best weather, May or June. If you want reliable sun and heat, July or August. If you want to avoid the crowds, September or May. I'm talking about continental Spain, of course - the Canaries are something else.
